Why many programs (like Microsoft Office) switched from binary data to XML or JSON.

To be fair, the data stored in a word document would be mostly text anyway, so a binary format would never save all that much, especially since these Office formats are zip archives, which compresses common text snippets like <xml-elments> with ease.

Maybe files that store mostly numbers would benefit more, and 3D model file formats and images definitely do.
