Welcome to r/Kombucha! If you're wondering what's growing on your kombucha and if it's normal, you've come to the right place.

Please review this information before posting a picture of your batch to the subreddit.

TL;DR:

  • Dry + fuzzy on the surface of the liquid/pellicle/SCOBY is most likely mold: mold pics https://imgur.com/a/SzhysHi
  • Geometric growths or wrinkly patterns on the surface of the liquid/pellicle/SCOBY could be kahm yeast: kahm pics https://imgur.com/a/XlnO7Ox
  • Anything else and anything under the liquid level is most likely normal: normal pics https://imgur.com/a/HJaENDv
  • If you're not sure, wait a few more days: mold or kahm will get more obvious as they grow, normal will stay about the same or form into new pellicle/SCOBY
  • If the kombucha is already bottled for carbonation (commonly called second ferment or 2F), mold/kahm is very unlikely due to the high acidity and lack of oxygen access.
  • Always use at least 2 cups of starter per gallon (125ml/L) when making kombucha to acidify the batch: high acidity (pH < 4.6) protects the kombucha from mold and kahm.

Terminology: in this guide, "pellicle/SCOBY" refers to the rubbery blob that forms at the surface of a batch of kombucha. SCOBY stands for "symbiotic culture of bacteria and yeast", and those bacteria + yeast are found both in the liquid kombucha and in the solid rubbery blob. The rubbery blob's more accurate scientific name is "pellicle": it's a biofilm/mat of bacterial cellulose secreted by and connected to the bacteria forming it (some yeast also live in the pellicle). Culturally, however, the term "SCOBY" widely refers to the pellicle so this guide uses both terms.

Diagnostic Quiz

1 ) Is the growth/odd thing on the top surface (exposed to air) of the liquid kombucha or existing pellicle/SCOBY?

  • Yes - go to 2
  • No - go to 8

2 ) Is the kombucha already bottled for carbonation (commonly called second ferment or 2F)?

  • Yes - likely pellicle/SCOBY growth (it can happen in 2F!) or a yeast cluster. Mold/kahm are extremely rare in 2F due to the high acidity (pH <4.2) and lack of oxygen access (required for mold to grow). Booch on!
  • No - go to 3

3 ) Is the growth dry and fuzzy looking with white or green color, and/or with black spores growing out of it?

  • Yes - likely mold. Go to Mold section for pictures.
  • No - go to 4

4 ) Is the growth a wrinkly or geometric pattern, very rough patterned surface, or very large air-y bubbles that cover large areas of the surface?

  • Yes - likely kahm yeast. Go to Kahm section for pictures.
  • No - go to 5

5 ) Is the growth one of: white/translucent + wet, disconnected oily/patchy sections, or a thin film with bubbles trapped underneath?

  • Yes - likely normal pellicle/SCOBY growth. Go to Normal section for pictures.
  • No - go to 6

6 ) Is the growth flat, leathery, and brown?

  • Yes - likely a dried out pellicle/SCOBY area. Go to Normal section for pictures.
  • No - go to 7

7 ) Is the the growth brown/black, wet, and partially/completely surrounded by pellicle/SCOBY?

  • Yes - likely a yeast cluster. Go to Normal section for pictures.
  • No - probably normal, but review all Normal, Kahm, and Mold pictures to be safe.

8 ) Is the growth/odd thing completely submerged in liquid?

  • Yes - likely yeast. Yeast can form dark brown clumps in the liquid or on the pellicle/SCOBY, or alien-like formations suspended in the liquid. Mold and kahm cannot grow beneath the surface of the liquid without also showing on the surface exposed to air. Go to Normal section for pictures.
  • No - go to 2

Pellicles/SCOBYs have a ton of natural variation. A normal pellicle/SCOBY should look wet, tan/white/translucent, and be mostly smooth (some bumps are normal). There may also be wet brown/black yeast blobs that attach to the liquid side of the pellicle/SCOBY, get absorbed into the pellicle/SCOBY, or float around inside the liquid.

Mold occurs when the kombucha is not acidic enough (pH < 4.6) to prevent mold organisms from growing. Other factors that make mold more likely are unsanitary conditions and cold brewing temperatures (<65F/18C).

If there is mold on your batch:

  • You must throw away everything (liquid + pellicle/SCOBY) and start from scratch with fresh starter tea. By the time mold is visible on the surface of the brew, it has already contaminated the entire batch.
  • Sanitize the vessel, cloth cover, and any utensils used in brewing with a homebrew sanitizing solution (StarSan, OneStep, SaniClean, potassium metabisulfite, etc) or throughly wash with soap + hot water followed by a pasteurized distilled vinegar rinse (no raw vinegar, which contains live microbe cultures).

To prevent mold, the most important thing is to use at least 2 cups of starter tea per 1 gallon of kombucha (125ml per L) to acidify the batch. Starter tea is mature kombucha: either from a previous batch (yours or a friend's), from a SCOBY hotel, or from raw/unflavored/unpasteurized commercial kombucha such as GTs or Health-Ade.

This amount of starter tea is a good rule of thumb for safe acidity: if you have a pH meter or strips, check that the starting pH is <4.6. Another important factor is maintaining clean/sanitary brewing practices: however, because kombucha is an open air ferment some mold organisms may get in even with a cloth cover, which is why acidity is also important.

Kahm Yeast

“Kahm” is a generic term for many species of usually non-harmful but also non-desirable wild yeast that can take hold in kombucha (outcompete the kombucha culture) and appear as surface growths on the the pellicle/SCOBY. Kahm often looks geometric or wrinkly vs the smooth/bumpy normal pellicle/SCOBY.

Kahm itself isn’t usually dangerous, but to quote our resident food microbiologist u/Albino_Echidna: “Kahm is a term used to lump a whole bunch of unwanted yeasts together, all of which are indicative of an unsafe fermentation environment. Kahm growth is indicative of a fermentation gone wrong. 'Kahm' itself isn’t harmful, but it is a warning sign that your environment wasn’t quite right and will be at higher risk of pathogenic growth as a result."

If your batch has kahm, it is up to you whether to toss + sanitize + start over with fresh starter kombucha or to try to scrape off the kahm from the surface and continue brewing. It is always safest to toss and restart - see the instructions in the Mold section.

To help prevent kahm, use at least 2 cups of starter tea per 1 gallon of kombucha (125ml per L) to strongly establish the kombucha culture and acidify the batch. Kahm may also be related to unsanitary conditions, high brewing temperature (>85F/30C), or oversteeping tea (>1hr, but may vary).

mold! FOUR MONTHS, UNTOUCHED

So… I used to make kombucha regularly and then life happened.
I left my kombucha sitting for FOUR MONTHS, UNTOUCHED .💀

Today I finally went to check on my poor SCOBY family, probably expecting them to be a little dehydrated and emotionally neglected.
Instead, I discovered they have apparently started their own ecosystem. There are moths. There are maggots. There are things MOVING. 😭

I have clearly failed as a SCOBY mother.
Before I hold a tiny funeral, disinfect everything within a 5-metre radius and accept that my children are beyond saving… is there any chance this is salvageable? 😂
Can I rescue a clean layer from underneath and start over, or has the entire jar officially crossed over to the dark side?

Please be gentle. I already know CPS (Culture Protective Services) should have taken my SCOBY away months ago. 😭

beautiful booch Butterfly/blue pea tea booch

My first time making kombucha out of butterfly pea/blue pea tea. It was delicious! I ended up not flavoring it - it was perfect as is. I let it 2F for 2 days but there was too much space so it didn’t carbonate too much.
Still delicious and we used it to toast my birthday at midnight 🎉

The color was this elusive purplish red depending on how it caught the light. Beautiful!

started my kombucha jar last year in sept. when my friend sent me her extra pellicle. i keep this jar at my hostel (dorm) away from home. and i havent checked upon it since may. during that time THICC pellicles grew which were so fascinating to look at.
so today i decided to clean out the jar and put fresh sweet tea (i use a single bag, or two if i want it strong, of black tea for a litre of water with 50-80g sugar, depending upon how fast i want it to ferment). to create space in jar i had throw away old pellicles which made me kinda sad, seeing a year worth of pellicles just go to waste. since i live in a hostel, we dont have any cows to feed them and i suppose its not good for dogs?
also i took a bite of a pellicle and it tasted sorta like a raw mango? lol.

I brewed my first bit of kombucha with a SCOBY given me by a neighbor. I know I did a lot of things wrong. I didn't have enough started liquid. I was already in the process of making it, so I just had my husband buy some kombucha to make up the difference. He got a ginger one, used it anyways. ​When I tasted it, it was definitely leaning towards vinegar.

Last week I decided to try again. I used a little bit of that liquid as a starter. I'm currently on day 8. I like the way it taste even though I think it could be less sweet. I just don't think it has enough carbonation. How do I transform it to be bubbly like the ones in grocery store? Any suggestions?

Also a note about the Scoby. I left it in the little container my neighbor gave it to me in. Then it grew thicker. So I had the "old" one and a new one. But when I did my first (lousy) batch another scboy grew forming to the size of the glass jar I'm using. So it's pretty massive in diameter. When I brewed this second batch last week, because the smaller scobys (old & newer) weren't floating. I put them on top of the big boy. And now it looks like another scoby the size of ​​jar is starting again.

flavor pawpaw kombucha

ok so still new to making booch but made some pawpaw pie flavor booch and wooooo it’s the best one I’ve made yet. Great early fall flavor. I have a lot of sediment cause I just use blended fruit and avoid the pulp when I drink it.
Used 1/4c foraged pawpaws a clove and some cinnamon. very cidery flavor.

I’m sorry I just had to share this with ~someone~ even just into the r/kombucha void

Decided to try this kombucha today as it was on sale at Grocery Outlet. I am not kidding when I say I couldn’t bring myself to drink it. I struggled through three sips. I’m not even sure you could pay me enough to drink it. Why does it taste like THAT

I like other flavors from this brand (their dill pickle one is great!) but oh my god who approved this monstrosity

Hi,

This is my first time making kombucha. I made the tea, added the biological sugar and when it was cooled down the scoby was added. The pictures are from 10 days in. I see a very small white spot. Is that mold? Do I need to start over, including getting a new scoby?

Hopefully someone with more experience can help me out.

hello! I’m a few years into brewing but I can never get my f2 fizzy enough! my technique is:

f1 for 2 weeks

f2 usually blended raspberries and peaches into an airtight bottle for 5 days (burped once) and strained with a sieve imto another airtight bottle and refrigerated…

what’s my issue!?

climate is Scotland so not super warm but quite content temp in the kitchen

So today I checked it out, the smell was acid fully - I haven’t tasted it.
But I found a little fat worm that it’s not long - should I just throw away everything now?

what's wrong!? Kombucha horrible reaction

Had kombucha like... 8 hours ago, since then I woke up with extreme bloating, severe constipation, burping and passing gas and nausea. Is this a normal reaction? I was hoping it would help candida but this sucks. I don't think it's for me. Kefir never gave me this bad of a reaction. I'm wondering if it's an mcas reaction? I had store bought. I also had a butterfly facial rash with mild eoe

pellicle I made a dessert using my Kombucha pellicle...

...And it was amazing !

I know it doesn't look that appetizing but hear me out. Instead of composting or straight up throwing away this undervalued cellulosic yeast appartment complex, try this recipe next time !

The thickened "juice" tastes sweet, caramelized and... Exotic, for a lack of better word.

The pellicle bits are candied, firm and chompy, similar to a good nata de coco. Warm, it's like a solid piece of apple pie straight in your mouth, somehow ?

Now I look forward to my next pellicle as well !

Ingredients

100g Pellicle stolen from its mother SCOBY

100g Water (100 mL)

100g Sugar ; I used white sugar but next batch I'll experiment with raw cane sugar or honey, maybe even maple syrup

100g Coconut cream (the cheap kind you can find in every East-Asian shop)

Recipe

(Wash your hands...)

Grab the pellicle, wash it and remove external layers that are not solidary and/or very yeasty or suspicious-looking. Don't be too thorough, we want to keep the juice inside. Then slap that baby on a plate and with a sharp knife or a pair of scissors, cut it into bite-sized pieces.

In a saucepan, mix the water and the sugar to make the beginning of a simple syrup. Add the pellicle bits and the coconut cream/milk. Mix until the liquid looks sort of homogeneous.

-> Time to cook, start on High to bring it to a boil but monitor the mixture because it will bubble and try to explore the rest of your kitchen. Once it is boiling, stir it to ensure it doesn't stick to your pan. Then bring the heat down to medium so it is still simmering well but not escaping.

Keep it like that for 20ish minutes ; it will reduce in volume and brown a bit. That's good. The pellicle bits are candying and Maillarding (I made that word up).

Pour it into the container of your choice, it's ready to be eaten - be careful, it's like magma for 5 minutes, the pellicle bits are very good at retaining heat. Very good.

And there you are, a simple recipe to valorize your pellicle instead of slapping it in your trash bag.

Now I'm excited for the booch AND the byproduct.
